Cowboy Cookies
  • 3 Cups all purpose flour
  • 1 TBSP baking powder
  • 1 TBSP baking soda
  • 1 TBSP ground cinnamon
  • 1 tsp salt
  • 1 ½ cups granulated sugar
  • 1 ½ cups dark brown sugar
  • 3 eggs
  • 2 TBSP vanilla extract
  • 3 cups milk chocolate chips
  • 3 cups old fashioned oats
  • 2 cups sweetened flake coconut
  • 2 cups chopped pecans
  • 3/4 Cup Magical Coconut Oil
  • 3/4 Cup Unsalted Butter (or Magical Butter)

  • Preheat oven to 350 degrees.
  • Mix 3 cups of flour, 1 tbsp baking powder, 1 tbsp baking soda, 1 tbsp cinnamon, and 1 tsp salt in bowl.
  • Using a hand mixer, beat ¾ cup butter and ¾ cup coconut oil medium/fast speed until smooth. Beat in 1 ½ cups raw sugar and 1 ½ cups dark brown sugar to combine. Add 3 eggs and 2 tbsp vanilla extract.
  • Stir in flour mixture and add 3 cups of milk chocolate chips, 3 cups of oats, 2 cups of coconut flakes, and 2 cups chopped pecans.
  • Line 2 baking trays with parchment paper. Bake on 350 degrees for 16 minutes. Rotate sheets halfway through. Allow a few hours to cool. Eat to Treat!
