Barbacoa Mega Burrito
  • 3lbs Chuck Roast
  • 3 Bay leaves
  • 1 Large white onion sliced
  • 5 Cloves garlic
  • 1.5 tsp Ground cloves
  • 1.5 tsp Cumin
  • ½ Cup cilantro
  • ¼ Cup lime juice
  • 2 tsp Apple cider vinegar
  • 6 Chipotle chilies in adobo
  • ½ Cup beef broth
  • ½ Cup infused oil

Barbacoa Mega Burrito
  • In dutch oven over medium heat, add oil, onions, add garlic and toss in roast.
  • Brown roast on both sides.
  • Add cloves, cumin, apple cider vinegar, and beef broth.
  • Simmer for 3/4 hours until chuck if fork tender.
  • Remove roast and shred it using two forks.
